About Avocado Oil

Avocado oil is one of the few oils extracted from the fruit pulp rather than the seed. The avocado fruit is peeled and the seed removed, and the pulp is gently warmed to facilitate oil extraction using a press.

Over the past decades, avocado oil has become a popular choice among chefs and food enthusiasts, and an increasing number of studies suggest that the bioactive compounds in avocado oil may have beneficial effects on human health.

Flavor Profile of Avocado Oil

Cold-pressed avocado oil has a greenish color, a distinctive aroma, and a rich flavor with notes of avocado and butter. It is suitable for both cold and hot cooking, as it has a high smoke point of approximately 250°C (482°F).

Avocado oil pairs especially well with dishes that include fresh avocado, such as salads and cold dressings. It complements poultry and fish, creamy soups, and tomato and mozzarella salads. As a cold dressing, it works beautifully with steamed or boiled vegetables.

It is also excellent with freshly baked light breads and can be used as a butter alternative in baking. Avocado oil is a good substitute for extra virgin olive oil in a variety of dishes.


Health Benefits of Avocado Oil

Avocado oil is rich in monounsaturated and polyunsaturated fatty acids, which are beneficial for cardiovascular health. The main antioxidant in avocado oil is vitamin E, with levels ranging from 70–190 mg per kilogram of oil.

Other beneficial components include chlorophyll (11–19 mg/kg) and carotenoids (1–3.5 mg/kg). Chlorophyll is responsible for the oil’s greenish color, while carotenoids are actively studied for their health-promoting properties.

The most abundant carotenoid in avocado oil is lutein (0.5–3.3 mg/kg), which supports eye health and may help delay macular degeneration. Lutein is also beneficial for brain health, and studies suggest it may improve memory in middle-aged women.

Cold-pressed avocado oil also contains phytosterols (2.23–4.48 mg/g), predominantly beta-sitosterol, which exhibits antioxidant properties.

Considering its fatty acid profile and content of bioactive compounds, avocado oil is recommended as a healthy component of the diet.
